There’s nothing quite like late summer in Maine. The days are warm, the evenings start to cool down, and farm stands are filled with some of the best produce of the season. While Maine is known for its blueberries and lobster, peach season is another sweet summer treat worth celebrating.


From sweet and buttery peach crisp bars to a savory peach prosciutto pizza and a warm baked brie perfect for sharing, these three peach-inspired recipes are a delicious way to enjoy one of Maine’s best late-summer flavors.





When is Maine's Peach Season?

Maine peaches are typically in season from late July through September, with the best selection often found in August. Whether you’re picking them up at a local farm stand, farmers market, or a nearby orchard, there’s something special about bringing home a basket of fresh, juicy peaches and turning them into something delicious.

There’s nothing quite like a fresh peach dessert in the late summer, and these Maine Brown Butter Peach Crisp Bars take it to the next level. The secret ingredient? Brown butter. It adds a rich, nutty flavor that perfectly complements the sweet peaches and buttery crumble topping.

Made with juicy Maine peaches and a golden, buttery crumble, these bars are the perfect summer treat to enjoy with a cup of coffee, bring to a gathering, or serve warm with a scoop of vanilla ice cream.



Ingredients

Crumble Base & Topping

  • 2 cups all-purpose flour

  • ⅓ cup granulated sugar

  • ⅓ cup light brown sugar, lightly packed

  • ¾ teaspoon baking powder

  • ½ teaspoon kosher salt

  • ¾ cup unsalted butter

Peach Filling

  • 4 medium peaches, pits removed and diced

  • ½ cup light brown sugar, lightly packed

  • ¼ teaspoon ground cinnamon

  • 2 teaspoons vanilla extract

  • 1 teaspoon cornstarch

  • Pinch of kosher salt


Instructions

  1. Prepare the pan

    • Preheat oven to 350°F. Line a 9-inch square baking pan with parchment paper.

  2. Brown the butter

    • In a small saucepan, melt the butter over medium-low heat. Continue cooking, stirring occasionally and scraping the bottom of the pan, until the butter begins to bubble and pop. Keep cooking until it starts foaming and you see dark brown flecks throughout the butter.

    • You’ll know the butter is ready when the bubbling and popping stops, which means the water has cooked off and the butter has browned. Remove from heat and let cool slightly.

  3. Prepare the peach filling

    • Slice each peach into 8 segments, then cut each segment into ½-inch pieces.

    • In a small bowl, combine the peaches, brown sugar, cornstarch, cinnamon, vanilla extract, and salt. Stir until the peaches are evenly coated.

  4. Make the crumble

    • In a medium mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt, breaking up any lumps.

    • Pour the browned butter into the dry ingredients. Using a rubber spatula, gently mix until a crumbly dough forms.

  5. Assemble the bars

    • Add about ½ to ⅔ of the crumble mixture into the prepared pan. Use an offset spatula or the bottom of a measuring cup to press the dough into an even layer covering the bottom of the pan.

    • Give the peach mixture one last stir, then spread it evenly over the crust.

    • Crumble the remaining topping over the peaches.

  6. Bake & serve

    • Bake on the middle rack for 50–60 minutes, or until the topping is golden brown and the peach filling is bubbling in the center.

    • Transfer to a wire rack and let cool completely. Chill in the refrigerator for about 1 hour before slicing into 16 bars.

    • Store in an airtight container in the refrigerator.




I’ve been experimenting with some fun and unexpected pizza flavors at home, and this Maine Peach Prosciutto Pizza with Fig Jam has quickly become my all-time favorite. The combination of sweet, juicy peaches, salty prosciutto, mozzarella, and a touch of fig jam creates the perfect balance of flavors in every bite.


I know some people are firmly against fruit on pizza, but I’m proudly on the side that believes pineapple absolutely belongs on pizza. So if you’re willing to trust me, let me convince you that peaches deserve a spot on your pizza too! This sweet and savory combination is the perfect way to enjoy one of Maine’s favorite late-summer treats.



Ingredients

  • 1 ball pizza dough (store-bought or homemade)

  • 1–2 ripe Maine peaches, thinly sliced

  • 1 package mozzarella cheese (8 oz), shredded

  • 1 package of prosciutto (3 oz), torn into strips

  • 1–2 tablespoons olive oil

  • 2–3 tablespoons fig jam

  • Fresh arugula (optional)

  • Freshly cracked black pepper

  • Pinch of flaky sea salt


Instructions

  1. Prepare the dough

    Preheat oven to 475°F (or as hot as your oven allows). Let pizza dough come to room temperature for about 30 minutes before stretching.

  2. Build the pizza

    Stretch dough onto a lightly oiled baking sheet or pizza stone. Brush with olive oil, then smear on a thin layer of fig jam. Add fresh mozzarella, peach slices, and torn prosciutto.

  3. Bake

    Bake for 12–15 minutes, or until the crust is golden and the cheese is melted.

  4. Add the finishing touches

    Remove from the oven and top with arugula. Finish with freshly cracked black pepper and a sprinkle of flaky sea salt.

  5. Serve warm

    Slice and enjoy while the peaches are still juicy and the cheese is perfectly melted.


Tips for the Best Peach Pizza

  • Choose peaches that are ripe but still slightly firm so they hold their shape while baking.

  • A balsamic glaze drizzle is another delicious addition if you love a sweet and tangy finish.

There’s something extra special about a warm Brie appetizer, especially when it’s topped with fresh Maine peaches and served alongside a toasted baguette. This sweet and savory combination is the perfect summer starter, with creamy melted Brie, juicy peaches, crunchy pecans, and a drizzle of honey coming together in every bite.


I recently made a Brie warmer in my pottery class, complete with a small casserole dish and a stand underneath where a candle sits to gently keep the cheese warm throughout an event. It’s become one of my favorite ways to serve Brie because guests can keep coming back for a warm, melty bite all afternoon.



Ingredients

  • 1 wheel of Brie cheese (8–12 oz)

  • 1 ripe Maine peach, diced

  • 2–3 tablespoons honey, plus more for drizzling

  • 1–2 teaspoons fresh thyme leaves

  • ¼ cup chopped pecans

  • 1 baguette, sliced and toasted

  • Freshly cracked black pepper (optional)


Instructions

  1. Prepare the Brie

    Place the Brie in a Brie warmer or oven-safe baking dish. Using a sharp knife, score the top of the Brie in a crosshatch pattern, slicing about halfway through the cheese.

  2. Add the toppings

    Top the Brie with diced peaches, a drizzle of honey, fresh thyme, and chopped pecans.

  3. Warm the Brie

    Bake or warm according to your Brie warmer instructions until the cheese is soft and melted inside, about 10–15 minutes. Be careful not to overheat, as the Brie can become too runny.

  4. Serve

    Serve warm with toasted baguette slices for dipping.


Toast the baguette

Slice the baguette into ½-inch slices. Arrange on a baking sheet and lightly brush with olive oil if desired. Toast at 375°F for 5–8 minutes, or until golden and crisp.
